Greetings,
I have an oil leak that seems to be coming from the gaskets right
under the camshaft cover so I’m thinking the gasket is shot. I’m
planning on removing the engine and replace the gaskets but I’m not
100% sure how to get it out. The engine seems to be too tall to slide
out from either side and I’d like to avoid removing engine parts to do
this.
Does anyone have any pictures or step by steps that I can use to help
with this?

You absolutely do not have to remove the engine to replace the cam
cover gasket. You remove the fuel tank and the ignition coils, then
you'll have access to the cam cover.

Any workshop manual will show you exactly what you need to know. For
a newbie, the Clymer shop manual is preferred over the genuine Honda
shop manual if you can't afford both. Pay particular attention to
removing any old gasket sealer and make sure you apply the proper
sealant in the correct areas ONLY to the camshaft end cap area of the
cam cover gasket. A used Clymer manual should cost less than $10,
they're quite common on ebay and used book stores online.

After some additional research I found that it’s not the camshaft
covers but the cylider head cover that I need to pull off. I’m going
to pull the gas tank off and the ignition coils and see just how much
room I have after that. I’ll post my findings afterwards.

The cam cover and what you are calling the cylinder head cover(s) are
the same thing.
