A buddy gave me a carb yesterday that he "acquired" from a site not too
far from where they dug up the Plymouth here in Tulsa. Should I try
running it, or stick with the stock 2 bbl on the Fiat project?

May as well run it! It will work better than what ever the Fiat comes with!

I'm not sure about that. I have a feeling this car will be a blast to
drive. It was last ran 2 years ago, I'm hoping it'll start so I can pull
it into the garage before it turns into the Fiat Fiasco.

Looks a good bit like an old Linkert to me.
I was kind of envisioning a dual throat Weber with velocity stacks on
your Fiat, but that may just be me.

OTOH, PiPPi might have taken that Kingston and used it as a throttle
body on a home-built fuel injection setup...

If I run across one cheap, I'd love to go that route. This will be a
very low budget project. With the deal I'm getting on the car, I think I
can build it and have it driveable for under $1K.

Shit... Now you've got me to thinking about using an S&S carb with the
tear drop air cleaner. If it'll work on an 883 Sporty, why not on a 850
Fiat?
