My RD400 worked pretty well when I was in college. My KZ750N was about
perfect. I used a ZL600 Eliminator to do the BlueRidge from end to
end, including camping gear on that one.
My sv650 trackbike worked pretty good doing 700 mile days as well.

1) Big enough for you to be comfortable on it for extended riding
2) Have enough luggage capacity to carry what you need.
You determine personally each of those settings.
For me it a Concours 1K with a Givi top bag. I have gone for months on it.
For my wife its a PC800 and its good for about a week, and I am carrying all
the tools.

The Concours is a good touring bike. With a Givi big enough to carry
two helmets, the Concours will carry about the same as an Electra
Glide, both in weight and volume.

I did it in a Dodge Ram Pickup in two days recently, so what.

I used a Suzuki 350 trail bike for three years and didn't feel like I
was missing out on much. Perfect ride on ANY street. OK, so you can't
go with the flow on German autobahns, but that's endlessly boring
anyway.
Touring competence is an attribute for riders, not bikes.
