I sold my Katana tonight, and forgot to take the plate.

I called the buyer, and he agreed to mail it back.

How serious of a sin have I committed?

Can I go down to the local Secretary of State (i.e. DMV) and just have the
plate unassociated with me or the bike?

I did the same when I sold my 1800, not thinking that I could save $35
by transferring the plate to my next bike. In fact, I told the guy he
could have it so he couldget the bike homeand to just cut it up when
he's done, which he did when I caleld him a day later wanting to save
thta $35 :)-

You can call the police and file a stolen plate report in case the guy tries
to use it.  If you get it back, contact them again and tell them it's been
"found" so you don't get arrested or detained for stealing your own plate.

*some states, the plate stays with the owner; others, it stays with the
vehicle, and there are probably lots of variations.

 Go to a Secretary of State office and have the plate cancelled. I did a
similar blunder when selling an old beater car to an old acquaintance. (also
in Michigan) He said he needed the plate to get it home and would return it
after he got his own plate. This didn't happen so I cancelled it. A year
later I got a call form the Sheriff's department. The car had been abandoned
and he never bothered to register it in his name. Their records showed the
plate cancelled and I had documented the date that I sold the car and signed
over the title and registration. I was off the hook. I believe in Michigan
that you can legally drive a recently purchased vehicle without a plate for
a few days. The Secretary of State web site should have the info.
