I was thinking about picking up a Suzuki SV650. I'd like something with a
little more oomph than my Honda Shadow 600, but I don't want to sacrifice
too much fuel economy.
I'm thinking it would have:
a)A bit higher seat height.
b)Bigger fuel tank.
c)Better acceleration, higher top speed so I can cruise at 80 or 90 if I
need to.
d)Hydraulic brakes on both wheels ... which I'd like.
Any downside I'm not seeing?

This might or might not be a downside for you, but the riding position
is more like a sportbike, especially on the fairing version (SV650S).
BTW when you start experiencing some performance you'll prolly be having
too much fun to worry about fuel economy.

Are there any street bikes that don't look like cruisers but don't
position the rider like a sport bike? The only thing I've seen so
far is like 250 CC. Mainly curious, thanks.

To name just a few, the V-Strom, Triumph Bonneville and Buell Blast
would meet your criterion, assuming they count as "street bikes".
