Right, I won't go into details as to how I got to this position with my
bike, I shall just say what the symptoms of the fault are and see what
you
think.
Bike revs out cleanly in first to fourth gear. Starts to, I can only
describe it as surge, in fifth and sixth. You can actually feel it
hesitate like a switch on the engine being rapidly turned on and off.
Hills and headwinds lead to a very noticeable speed drop.
What's wrong with it?

What kind of bike? Carbs? FI?

What type/year is the bike?

If it's carbureted, my bet would be an impaired fuel flow such that
when you've got it wide open pulling a load it draws down the gas
in the float bowls more rapidly than the flow of gas from the tank
can replenish it, a condition which can be caused by crapped up
fuel filters or screens or possibly a blocked vent to the tank
creating
a partial vacuum, all of this of course being purely speculative of
course, since you've neglected to mention the make or model or
type of fuel delivery system.
What do I win ?

Some current bikes have circuits and throttle body parts that
restrict 5th and 6th gears. My V-Strom has that setup. It's a remote
possibility.
