So what are the practical reasons for wearing a vest? I can see on a
hot day if you don't want to wear a leather jacket, a vest offers
slightly more protection than a shirt. (I still wear my jacket even on
hot days simply for safety.)

The side pockets are a place for my smokes, so I can more easily (with
only the left hand) grab the pack and light up while riding.
Wearing an old denim vest (sleeves cut off a demin jacket) helps in
the same way because I don't want the cigarette pack wearing holes in
the pockets of my leather jacket (my wife is getting real tired of
fixing my pockets after about the 10th time now).
If you are going to ride without a jacket, a vest (made from suitably
heavy leather) is a bit more protection than just a shirt is.
Keep in mind also that, in addition to preventing road rash, there is
another reason for wearing leather when riding a motorcycle:
Decreasing your friction coefficient so that you slide when hitting
the pavement, discouraging a windmill-style, rag-dolling action, which
will bash your feet and hands to a bloody pulp.
If you have to lay on the ground to check something on your bike, it's
nice to have a vest, so your shirt doesn't get dirty/wet/oily. Like
all motorcycling clothes, the vest shouldn't be too purdy - it's to be
used and not cared about if it gets a bit abused (which is one of the
reasons black is nice).
Under a coat and sealed from the wind, a thick leather vest does help
trap your body core heat and provide extra protection against getting
damp in the rain.
A vest gives you more pockets and pockets that are more easily
accessible than a shirt alone - like if you need to carry change for
tolls or parking.
Well, there's a few. Probably many more as well.

Vests look pretty damn cool over a t-shirt, especially with fingerless
gloves.

Pockets and patches. A vest serves no other practicle function unless it is
hi-vis orange or lime.
