In general? 32mm is about right for 125cc to 250cc per carb. For example
one may be used on a highly tuned 125cc two stroke MX bike. Most high
performance 2 strokes in the 250cc range use ~36mm-38mm. Not a hard rule
though, my Husky CR400 came with a 36mm Bing.

If you plan on using them on a 4 stroke, add ~100cc to the displacement,
something like 225cc-350cc per carb would be in the ballpark.

Good carbs at a fair price. They still make parts for them and they
would surely have to be rejetted for your application. Add ~$5-$20 per
carb if they do need different jets.
