Anybody know if there is a relatively not-too-difficult way to install an
oil pressure and/or temperature gauge on a 1989 Gold Wing 1500?

If you google for the subject, you may find that somebody makes an
aftermarket kit for your bike. If not, you'll have to engineer your own
systems.

5: SWITCH, OIL PRESSURE
The oil pressure switch probably has a 1/4-inch NPT thread. If you remove the
switch and the threaded part tapers, it's National Pipe Thread.
Look in the drawers at your local hardware store for parts to plumb the
pressure switch and the pressure gauge and the oil temperature sender from
the same hole the oil pressure switch came out of.

For oil temps, you might be able to use a combination thermometer
and dipstick. I made one up using a foot long deep fryer thermometer,
a little bit of epoxy putty and the remains of a baja specialties
dipstick plug.
The thermometer cost $10 and runs past 300F which is a little bit high
but still usable. It changes very, very little after the engine warms
up
but it's useful for telling you when you warmed the bike up enough
to start tuning.
