What is normal temp for vstar 1100 heads? I know it is air cooled, but after
being on freeway at 70mph they will reach 291.

What's the ambient air temperature? 59 degrees? 110 degrees?
291 degrees Fahrenheit cylinder head temperature is OK, 291 degrees Celsius
will turn your oil into asphalt.
350 to 375 degrees F will fry an air-cooled engine.
You could look under the valve adjustment covers to see if your oil is
turning into
brown sludge to get some idea about how often you need to change your oil.
My GS-1100 Suzuki's oil temperature reached 290 to 300 degrees, even with an
oil cooler, when I raced it at Willow Springs in the summertime.
There are motorcycles that ran a lot hotter, like the Honda CB900 that got up
to 315 degrees F cylinder head temperature.
Cycle World magazine had a theory that 20w50 oil somehow ran hotter than
10w40 oil, so they instrumented a CB900 and ran the same course twice with
the crankcase filled with the two different weight oils and couldn't prove
that the engine ran cooler with the thinner oil.
CW concluded that there weren't dozens of smoking wrecks littering the
roadside, so oil temperatures as high as 315 degrees must not be all that bad.
Lubrication engineers said that mileage between oil changes using petroleum
oils should be cut in half for every ten degrees over 240 degrees the oil
temperature gets up to.
The normal oil change interval for my GS-1100 was about 3700 miles. Using the
derating formula, I figured I should change my oil after every race weekend,
or about 100 miles.
Looking under the valve cover, I could see where some oil was turning into
brown wax and cooking into a brown varnish. But it wasn't all that bad. The
valve springs were so weak the cam followers wouldn't wipe the brown wax off
the closing side of the cam lobes.

How about gas millage?
I am only getting 100 miles per tank, about 3.5 gals.

Sounds OK. Who really cares? Air-cooled bikes, including V-Stars, have
been running for a century.
