It seems to me the Animal was probably spooked and this was a deliberate
attack, not an accident. That Bull tracked straight to the "animal" he
saw screaming down the trail, and took it out. If you look carefully,
the Bull dropped his head to attack, didn't turn away to avoid the
collision...

If they're anything like cows they'll just stand there looking at you
for a long time and then, when it's too late for you to turn, they'll
panic and run in a random direction.
There's a reason that we eat them and not the other way around.
