got this 1981 street bike in the garage, smells like gas...
if i drain the tank, do i worry about stale gas evaporating
in the carbs and gumming up the works or do i just open
a door & let it vent for a bit...

I'm sure the carbs are already gummed up.

Do they have drains?

it runs pretty good, so they aren't that gummy.
I'll check for drains, (the last street bike I touched
was a rz350 back in the 80's)

never mind...  the smell went away,  i
must have scared a wee bit of petrol out
of it while tossing it up on its centerstand

  Hi john!
First thing is to make sure that the petcock is turned to "On".
With the cv carb and vacuum assist petcock, Fuel won't bleed through
the petcock without the engine running, unless there is a petcock
malfunction.
The  "Pri" petcock setting will let the fuel pour right through.

Other than that, just wrap the bike in shrink wrap and let the new
owner worry about it when he comes by for the bike.  That ought to
eliminate the smell problem.

Thanks for everything, john!   I'll see you in about a month.
