Probably the ECU doing that on purpose. F1 cars do the same thing
when warming up. I don't have a good theory why, just noting the
point. Note that it looks like the dude is doing the warmup but
when he walks away, the car is doing it by itself

They should win a prize for best looking bike. There's a report from
someone who was there on the PB forum. He thinks they had 2 screamer
engined bikes and one big bang.

The one on the video sounds like a big bang engine to me.
