So, are they playing for the gallery (including potential sponsors)
with their fast times in testing, or is this genuine pace?

I'm not sure how you think they can "play for the gallery", unless
perhaps they're on qualifiers the whole time.

As I understand it, all the teams ran race distance simulations on the
last day.  It'd be interesting to see the overall times for those, but
then I guess that would be *so* interesting that the teams may be
cagey about letting that info out.

I'm more used to watching cars, where some teams definitely "flatter to
deceive" in pre-season testing, only to be mid-pack come the first
qualifying and race. In cars this can sometimes be due to qualifying,
and sometimes due to the cars in testing not needing to be legal.
There's probably much less scope for that sort of thing in bikes I
suppose.
