I have just been adjusting the tappets (valve clearance) on my 2000 XVS1100
Dragstar at .10 for the inlet and .15 for the out, these are within the
tolerances set in the Yamaha workshop manual but it is still not good, does
anyone have a clearance setting that works?

What do you mean, it's still not good? It's normal for that engine to
make quite a bit of noise.

when the engine is cold it sounds fine but as it warms up there becomes the
distinct sound of noisy tappets, which would make me think that I need to
increase the gap?

If they are noisy, I would think you need to close the gap. But if
they are too tight, you risk burning the valves. If you are within
tolerances, I would not worry about the noise. My 1100 used to make a
racket, especially when it was really hot outside.
